Victorinox has every delivery of steel checked by means of spectral analysis. The steel is tempered, annealed and polished to achieve the necessary hardness and optimum resistance to corrosion. The quality of a knife doesn’t just depend on the correct alloy; it also depends on the precise hardening and annealing temperature. After hardening and annealing, the blades have a hardness of 56 HRC. In principle, the greater the hardness the better the edge-holding ability of the steel.
